But who says that you can’t turn these nutritional powerhouses into extremely delicious dishes? The key is to experiment in the kitchen and find what suits your taste. Cheddar Vegetable Bites
What you need:
- 6 whole wheat tortillas
- 2 cups Cheddar cheese
- 1/2 cup chopped mushrooms
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped onion
- 1/2 cup chopped yellow squash
- 1/2 cup chopped zucchini
- 1 tablespoon olive oil
Heat olive oil over medium high heat in a pan and cook vegetables until tender, about 6 to 8 minutes. Remove vegetables from pan. Place one wheat tortilla on the same pan. Divide Cheddar cheese into 6 equal parts then sprinkle tortilla with 1 part cheese, followed by about 3/4 cup of the vegetable mixture, then another 1 part cheese. Top with another tortilla and cook until golden brown on both sides. Repeat with the rest of the tortillas, cheese and vegetables.
Easy Guacamole
What you need:
- 3 avocados, peeled, pitted and mashed
- 2 plum tomatoes, diced
- 1 lime, juiced
- 1/2 cup diced onion
- 3 tablespoons chopped fresh cilantro
- 1 teaspoon minced garlic
- 1 teaspoon salt
- 1 pinch ground cayenne pepper
Mash together avocado, lime juice and salt. Add tomatoes, onion, cilantro and garlic to the bowl and stir to combine ingredients well. Season with cayenne pepper. Cover and refrigerate at least 1 hour before serving.
Yummy Zucchini Patties
What you need:
- 2 eggs, beaten
- 2 cups grated zucchini
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 1/4 cup chopped onion
- 2 tablespoons vegetable oil
- Salt to taste
Mix together eggs, zucchini, mozzarella cheese, Parmesan cheese, all-purpose flour, onion and salt. Stir to combine ingredients well. Heat vegetable oil over medium-high heat in a pan. Then drop tablespoonfuls of the zucchini mixture in batches of 2 or 3, depending on the size of the pan. Cook until each side of the patty is golden, about 2 to 3 minutes. Serve immediately.
