Venezuela has a touch of marine flavor when talks about food place. Fresh fish and shellfish generally are a part of typical fare. In fact, you can get fresh fish and shellfish in practically any part of the country. However, ‘pabellon’ is known as national food of the country. Pabellon is a meat dish that is prepared with meat, rice, black beans and banana.

“Arepas”, a kind of bread which is prepared with corn flour, salt and water, is demanded all the time everywhere. A bite of it with jam or cheese tastes wonderful. Arepas, with different methods of preparation and various implementations, is served by almost all the restaurants in Venezuela.

Don’t Say Banana – Say Matoke

Uganda is probably the banana basket of east Africa. There are so many types of banana, that there is not one general name for banana in the local language. Here is an introduction to some types of banana from Uganda.

The king of bananas in Uganda is definitely matoke. The term matoke is a generic name for a family of banana that are similar in characteristics. The matoke banana is a small, green banana which grows tightly on large bunches. It is a cooking banana. Ripe matoke bananas are also edible – as a last resort, instead of throwing them away.

The matoke banana tastes best peeled and steamed in banana leaves. It then develops a rich yellow colour. Matoke also tastes good roasted, as a snack.

Its soft, neutral taste is ideal as an accompaniment to fish, meat, groundnut, vegetable and pulse sauces.

Although the matoke has a reputation of not being particularly nutritious, it is very much beloved. It is often preferred to maize meal bread (posho), millet meal bread (kalo), rice, or boiled cassava, sweet potato, yam or arrow root. Then, soluble fiber can have a ‘gelatin’ like feel, as in it’s always wet and a little slippery. Eating soup stretches your food dollars and is healthy to boot. Mixing in a pot of water whatever ingredients you have on hand is cheap and filling. It is possible soup has been around since the first pots could be placed over a fire. The word “soup” most likely derived from the bread one poured it over called “sop” or “sup”. Before that, soup was known variously as broth or pottage or even gruel (although now we think of gruel as being strictly a mashed cereal grain boiled in water).

Poor Man’s Omelet

Let’s start with all the tools and ingredients you will need to cook the perfect poor man’s omelet: flat surface that gets hot, egg ring (omelet sized – 8″), oil/butter, fork, 3 eggs, and leftovers in the fridge.

The first step is to oil or butter the surface you will be cooking on and heat it up. You want to stick mainly with a medium heat so as not to overcook the eggs, which makes them too hard and spongy. Once your surface is heated and greased then crack the eggs into the egg ring and mix them up with a fork or other utensil that is relatively clean. The great thing about egg rings is that you can use any pan or surface you have to cook on and the eggs will stay in a perfect, workable shape. If you notice a piece of shell in the mixture than use half the egg shell you just cracked to scoop it out. Also, if you so desire, here you can add a bit of salt and pepper to the eggs.
