Religious Discrimination: Not Always A Piece of Cake

Religious Discrimination or Gender Discrimination?
We’ve all read about the baker or photographer who refuses services to the gay wedding couple. In the clash of sincerely held beliefs of “right and wrong,” someone will get hurt. One such case will be decided in the 2017-18 term by the U.S. Supreme Court.

A Colorado baker refused to prepare a wedding cake for a gay couple based on his religious convictions that homosexual marriage is sinful, and he should not be compelled to express approval of the marriage implicitly by his preparation of an item [the cake, and quite likely, the message written on the cake] celebrating the marriage. The Colorado court ruled for the gay couple. The baker’s cake is now served up on appeal to the Supreme Court.

Religious Discrimination May Depend on How You Slice It. Continue reading “Religious Discrimination: Not Always A Piece of Cake”

Cake Fillings – What You Need to Know Now That It’s Warm

As a cake decorator who sells their cakes or a home baker who prepares desserts for friends and family, it is important to know all of the facts about fillings, which ones need to be refrigerated and which can be left out at room temperature. Your reputation can depend on it, and you certainly do not want to make anyone sick.

We know that butter cream frosting does not hold up well in the heat. Think about a fondant covered cake with a filling. Do you think it’s safe to be out in the heat? Maybe not. Chocolate ganache filling melts if left in the heat for a period of time. Did you know that? It’s deceiving. It sets firmly so you can use it as a filling in sculpted cakes and are able to shape it into truffles that are delicious to eat but when a ganache filled cake sits out in the heat, the ganache gets soft and starts to disintegrate which, if it is a stacked cake, could come tumbling down.

Do some advance planning. Make sure that your clients or hosts are educated about the types of fillings that would be best suited for their events. Continue reading “Cake Fillings – What You Need to Know Now That It’s Warm”

A Rich History of the Carrot Cake

Carrot cake is a confectionery conundrum: it seems you either love it, or you hate it. But either way, theres no denying the appeal of this rich dessert throughout history. Food historians tell us that the origins of carrot cake were likely a type of carrot pudding enjoyed during medieval times. Later, during the Middle Ages, sweetening agents were hard to come by in Britain and quite expensive, so as a result, carrots were often used in place of sweeteners. Interestingly, despite being such a longstanding mainstay in Europe, American cookbooks didnt start listing carrot cake recipes until the early 1900s. And, it was actually in the 1960s before carrot cake began becoming a more common cake in the United States, soon becoming the dessert of choice at summer family reunions picnics and Mothers Day celebrations.

It Really Is the Icing on the Cake – How to Make Great Cake Icing

You have just taken your homemade cake out of the oven, and it is cooling on the counter. Maybe this is the first time you have made a cake from scratch, and you have relatives or friends you want to impress. I can help you with an easy to make frosting recipe that is extremely delicious and versatile.

This recipe is easy to follow, and can be flavored many different ways to customize your frosting to your cake flavor. You can substitute other flavored powder creamers, and substitute the whipping cream for other flavored liquid creamers. There are also different concentrated flavoring options on the market that can be used in place of the vanilla extract in this recipe.

White Buttercream Frosting

  • 8 cups confectioner’s sugar
  • 3/4 cup powdered coffee creamer
  • 1/2 tsp salt
  • 2 cups unsalted butter, softened
  • 1-1/2 cups Crisco shortening
  • 3/4 – 1 cup heavy whipping cream
  • 3 tsp pure vanilla extract
  • 1/4 cup Creme Bouquet flavor (or whatever flavor you choose)

Homemade Chocolate Frosting – The Perfect Finishing Touch For a Cake

Chocolate frosting is the perfect finishing touch on your baked cake. It can easily be made at home using easy to find ingredients. A heavy duty mixer is required for this recipe because you will need to blend it for seven to ten minutes on medium speed to allow the ingredients to mix together and give you a lighter texture. This will make it easy for you to spread the frosting over your cake and ensure that all of the ingredients have had a change to blend together.

This is my favorite chocolate frosting recipe. You can substitute the powdered coffee creamer for another flavored powder creamer, and you can substitute the heavy whipping cream for a liquid coffee creamer flavor as well. The options are endless when you look at the number of liquid coffee creamers that are on the market. Continue reading “Homemade Chocolate Frosting – The Perfect Finishing Touch For a Cake”

Baby Shower Cake or Cupcakes? You Decide

Cakes are a very important part of a baby shower. Not only is it tradition, but it’s a nice treat to offer your guests. There are many different ways you can choose to approach the cake design, and this page will hopefully give you some ideas and really get your wheels turning on the endless ways you can do it. Whether you make it yourself or buy it, the ideas are endless.

First, let’s start off by saying you don’t actually have to have a CAKE. No one says it has to actually be the traditional sheet cake with chocolate or vanilla icing. Why not try cupcakes? They seem to be trending lately.

There are a lot of different things you could do with cupcakes. Decorating them individually could be a lot of fun (and very cute), or you could stack them to resemble a center piece tower.

One idea I really like in particular is making a cupcake pull-apart cake. It’s simple to do – just put cupcake liners into a shaped cake pan (that’s the key – the cake pan has to have a shape to it, otherwise they’ll just look like a bunch of smooshed together cupcakes) and pour the batter directly into the liners. The cupcakes will bake and naturally form the shape of the pan. Icing and decorations make this type of baby shower “cake” really stand out. Serving is a piece of cake (ha, no pun intended!) because your guests only have to “pull apart” their piece. Continue reading “Baby Shower Cake or Cupcakes? You Decide”
