I’ve been writing about the benefits of eating organic food for months. I’ve focused on why this food is so essential to healthy living and how it makes us sparkle inside and out. One thing I haven’t focused on is why your everyday non-organic food is so BAD for our health. French Bread – Understanding Your Baguette From Your Batard

In the UK we like our bread, but unfortunately we’ve become terribly accepting of mediocre, bland choices. The French have a completely different attitude to bread, and it’s well worth visiting France just for the experience of freshly baked bread. Whilst over here the variety of bread on offer has grown quite significantly of late, it’s still a far cry from what you can find in even an average little town in rural France.

Visit a supermarket in the UK and your choices often range wildly between sliced brown bread and sliced white bread. You can find sliced white bread that doesn’t have any crust, and brown bread without a crust, then of course there’s the thick slices, thin slices and medium slices, not to mention the tall loaves and the square loaves. But ultimately it all boils down to blandness, and frankly even the ducks are getting sick of it.

Salt That Heals and Salt That Kills

Many people are confused about salt and rightfully so-your doctor and health professionals tell you to decrease your salt intake to decrease your risk of hypertension, heart disease, stroke and renal disease. On the other side of the fence, many gourmet chefs and holistic specialists claim that salt is good for you and essential for life.

The American Medical Association (AMA) and the Center for Science in the Public Interest (CSPI) claim that Americans are consuming ever higher amounts of sodium, up to 6,000 milligrams a day, instead of the recommended daily allowance of 500 to 2,000 milligrams per day. These high amounts, in a form that is unfriendly to the human body and with no ancillary mineral benefits, are what lead to serious health problems. The sodium that the AMA and the CSPI are referring to is the sodium found in table salt.

At the time of the American Revolution (around 1775) colonists were still eating a primarily British diet, consisting of meats, stews, puddings, breads and sweets, with limited vegetables. Beer, ale and cider were frequent beverages. For the more affluent, there was port wine and some liqueurs. After the death of Martha Jefferson in 1782, widower Thomas was given the appointment of “minister plenipotentiary” (your basic diplomat) by the newly formed U.S. Congress and dispatched to France. Thus began the life of a major foodie, wine connoisseur and kitchen gadget aficionado (we’re talking France, here, the country known for haute cuisine). There he discovered fine dining, olive oils, tasty mustards, succulent cheeses and pastries, all unique foods that were virtually unknown back in the Colonies. And he was hooked. Can You Freeze Tiramisu?

The question often comes up as to whether or not you can freeze tiramisu cake dessert or save it in the refrigerator. Of course tiramisu tastes best when fresh but the good news is yes, you can freeze tiramisu. In fact, I personally prefer when it is made 1 to 2 days ahead and stored in the refrigerator where the flavors are allowed to mix together a bit and to mature. Not to worry, it will keep for up to 4 days in total. Leftovers (if there are any) should be refrigerated immediately though.
