Salt Lake City Tacothon (Cheat Day on My Diet in Preparation for a Muay Thai Fight)

In preparation for a Muay Thai fight, I have been on a diet the past few weeks, and have enjoyed some pretty good results. The beauty of the diet I am on, is that it allows a cheat day once a week. The cheat day actually encourages you to go absolutely bonkers for 14 hours each week.

There is some science behind it, but that is fodder for another post.

I have been craving tacos the past few weeks, so I decided to organize a Tacothon.

The premise behind the Tacothon was to root out the BEST tacos in Salt Lake City.

I invited a few friends along, (Many of them are MMA Fighters or Muay Thai students) and this is what we found:

I wanted to begin the day with ‘Fast Food’ tacos. We have all been there… late at night, hunger strikes… waddya gunna do? There is nothing tastier after a night of drinking than a few tacos… that is if you can get through the drive through without getting into a fist fight with other late night Taco Lovers. The Health Benefits of Eating Kale

As one of the most prominent leafy vegetables in Europe, kale is a wondrous raw food with a plethora of redeeming qualities. Featured in many famous dishes from Africa, Ireland, Asia, the Netherlands, Brazil, Denmark, Holland, Sweden, Montenegro and Portugal kale is truly a global provider. Despite its amazing health benefits and international allure kale still remains largely under the radar in America. It is so popular in Germany, social clubs and celebrations have evolved around the vegetable but in America you rarely see kale used at restaurants or even in home cooked meals. Maybe it is the temptations of fast food, meat, frying and large portions that have kept kale largely undiscovered in the United States but as health and diet agendas hopefully so too will the uses of kale. As a super raw food that fairly inexpensive and easy to source there is no reason why we all should not be cooking with this leafy friend more often. Mostly promoted and supported by vegan, vegetarian and raw food enthusiasts everyone would be better served by including more kale in their daily eating routines. Very easy to cook with and boasting a voracious variety of uses it should not be difficult for anyone to increase their kale intake. After we learn a little more about kale and review its many health benefits I am sure there will be a clamor at the supermarkets to buy some.

It may sound like a lopsided TV wrestling bout, but it’s a serious fight we must win. The author has some important credentials and personal experience to offer on how to gain victory. Our opponents are fierce, ugly, and well entrenched in our country. Can a tiny ping pong ball compete against these monsters? Can a table tennis table compete with a dinner table? According to the science journal Lancet, we have a “childhood obesity epidemic”. The prevalence of overweight children and adolescents has increased dramatically over the past several decades bringing unprecedented incidence of chronic diseases like obesity, diabetes, and heart disease to our children. Is Your Child Getting Enough Good Nutrition?

In today’s world of fast food, parents are rightly concerned about their children getting adequate nutrition. One problem is that children can be fussy eaters. Having access to sugary junk food does not help that problem either. Some children will only eat certain foods. A big problem in food control is that the child will refuse food at the table, and then ask for an unhealthy snack later, or maybe sneak a cookie from an unsuspecting grandparent or aunt.

To cover the bases, it is a good idea to supplement with vitamins for children. Even if the diet is adequate, due to modern farming methods where foods are grown on depleted soil, it is a good idea to supplement to make up for the difference. It is no longer the day of small farms, where vegetable refuse and manure was added to the soil to enrich it. Today, the fields are stripped of vitamins and minerals. Mindfulness Attitudes – Patience

“Patience is a virtue” is the old saying. In our modern age of immediate access and speed, patience may not be something many of us practice very much. But it is one of the key attitudes of mindfulness and we need to recognise that slowing down our busy minds needs practice. We have probably all experienced the challenge of breaking persistent behaviour and know that habits do not change overnight, permanent change takes time.

How can we engage with patience? Our western culture is based on speed, we travel fast, we have machines to help us find the shortest route or the quickest route; we have fast food, or food on the go; we work on fast internet, high speed 3G to 4G to 5G; we have fast access to our bank accounts and use instant cashless transactions for ease and speed; we have fast domestics tasks, with automation and machines for cleaning and washing our homes and clothes, all to save us time and effort. We are not encouraged to stop and take our time our anything, so patience is not something we practice regularly. Continue reading “Mindfulness Attitudes – Patience”

Restaurant Table Credit Card Readers – Good or Bad?

Select restaurants around the nation are testing table-based credit card readers that allow customers to pay for there meal at the table. The news scare in the past year regarding waitresses and waiters stealing customer’s credit card information led to the transformation of a new industry involving products that protect consumer’s credit card information.

The restaurants that are participating in the credit card reader beta launch were reluctant at first to participate because they feared diners would feel rushed. Fast food restaurants such as McDonald’s allow customers to pay at the counter with their credit card. Table side payment is different from counter-side payment because diners are actually sitting down and being served by an employee that works mainly on tips. Waitertalk.com, an online forum for waiters and waitresses to vent on topics such as ‘bad tipping customers’ and ‘unruly management’ have formed a discussion forum against these so called ‘table-side credit card readers’. Waiters and waitresses believe the credit card readers will be a deterrent to leaving appropriate tips, especially in casual fast food restaurants such as the Ground Round, that typically attract middle-class customers that are not experienced in tipping and eating at non-chain restaurants. Some waiters believe the credit card readers will be the main focus of the dining experience and the machines will not allow them to upsel to the customer because the customer will be thinking about the bill more than the actual dining experience.
