Grilling can be done all year round. However, as seasons and climates change, you also have to adjust a few things while working the grill. During fall season, the temperature will be cooler and the weather will be more windy, which can affect your cooking if you don’t plan ahead.

With the right clothing, gear and a few preparations, grilling in the fall season will not feel like a huge adjustment! Follow these quick tips:

Clean your grill

If your grill has been in hibernation for the past couple of weeks (or months), now is the time to give it a good clean, prepping for some backyard cooking with cooler and more windy weather. Use a good grill brush to remove debris and leftover oils from your grates. Clean out the grease trays. Use a sponge and soapy water to scrub the exterior of your grill. Give the propane tank a check.

Having a good, clean grill to start with every time the season changes helps promote safety.

Be aware of the wind’s direction

Fire and wind don’t exactly go well together. During the fall season, anticipate the wind when you’re grilling. Know what direction the wind is coming from and position your grill accordingly. Face the vents away from the wind and turn your grill perpendicular to the wind’s direction so it won’t affect your fire too much.

Keep an eye on your grill

When you’re cooking barbecue on a cool, windy day, it’s best to monitor your grill. Open the lid carefully when you have to check, as a sudden gush could make the ashes land on your food.

Check your gas burners from time to time as well. When they go out, allow a few minutes to let the air circulate with the lid open before relighting.

Anticipate rain

Fall season can bring rain and light showers, too. But unless the rain is too heavy, don’t let that stop you! It’s ideal, though, to invest in a proper rain cover for your grill.

3 Amazing Grilled Meat and Pasta Recipes You Need to Try

Pasta is a favorite dish throughout the world. One of the charms of this dish is that it’s extremely versatile – you can choose whatever type of noodle you like and the choices are endless when it comes to sauces and ingredients. Try something unique and add a delicious smoky taste to your pasta by combining it with grilled meat.

Grilled Chicken and Pesto Angel Hair Pasta

What you need:

  • 2 boneless chicken breast halves, cooked and sliced into bite-size pieces
  • 1 1/4 cups angel hair pasta
  • 2 cloves garlic, minced
  • 1 cup pesto sauce
  • 2 tablespoons olive oil
  • 2 tablespoons toasted almonds

Cook pasta until al dente in a pot according to package instructions. Heat olive oil in a large saucepan over medium-high heat. Cook garlic until tender. Stir in cooked chicken, cooked pasta and pesto. Top with almonds before serving.

Grilled Salmon Linguine

What you need:

  • 1 cup cooked salmon, flaked into bite-size pieces
  • 1 cup linguine pasta, cooked al dente
  • 1/2 lemon, sliced
  • 1/2 cup chopped yellow bell pepper
  • 1/4 cup diced onion
  • 6 tablespoons skim milk
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons butter
  • 1 tablespoon low-fat cream cheese
  • 1 teaspoon chopped fresh dill

In a saucepan, heat olive oil and butter over medium-low heat then add bell pepper and onion. Cook until tender, about 6 to 8 minutes. Add cream cheese and stir until melted. Stir in salmon flakes and milk and simmer for 5 minutes, or until cooked through. Place pasta in a serving bowl and pour salmon mixture over pasta. Toss to coat. Top with lemon slices and dill.

Italian Style Grilled Shrimp Pasta

What you need:

  • 1/2 kilogram shrimp, peeled and deveined
  • 3/4 kilogram tomatoes, chopped
  • 20 leaves fresh basil, chopped
  • 2 cups angel hair pasta, cooked al dente
  • 2 cups shredded Mozzarella cheese
  • 1 1/2 cups heavy whipping cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup white wine
  • 2 tablespoons butter
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon Italian seasoning
  • Salt to taste

In a small bowl, combine basil, olive oil, garlic, Italian seasoning and salt. Mix until all ingredients are well-combined. Add shrimp to the bowl and toss to coat. Cover and refrigerate for 1 to 2 hours. When ready, cook on a pre-heated grill over medium heat until cooked through, about 5 minutes. Remove from heat and set aside. In a large skillet, melt butter then add white wine. Bring to a boil. Stir in heavy cream and Parmesan cheese. Simmer for 8 to 10 minutes until mixture is reduced. Add cooked pasta, tomatoes and Mozzarella cheese. Remove from heat and top with grilled shrimp before serving.
